Clean eating definitely does not mean Yucky eating. I had this while visiting home (Minnesota) and it was DELICIOUS. This would be a great side to bring to a BBQ, or other function – that is really tasty, and you could stay on your clean eating meal plan.
Ingredients
1 bag of lentils
1 cup frozen corn
1/2 cups diced celery (I do not like celery, so I didn’t put it in this recipe)
1/2 cup diced red pepper (I used green here)
1/2 cup diced red onion (I used a yellow sweet onion)
1 small diced tomato
1 jalapeno diced finely (optional)
1 Tablespoon Extra Virgin Olive Oil
2 Tablespoons fresh squeezed lemon juice
Salt
Pepper
Feta cheese
Basil
Instructions
Lentils
Rinse – making sure to take out small stones. Boil in salt water for 20 minutes, drain and set aside and cool.
Vegetables
Dice all finely and add to the lentils when cool.
Add salt and pepper to taste. Add fresh squeezed lemon juice and Extra-Virgin Olive Oil and toss. Add Feta Cheese and Basil prior to serving.
Note: I like my food spicy, so I added 1 jalapeno finely diced.

This looks good! I’m not really sure if we have lentils over here, I have not had lentils ever since I think! But after a quick research, I learned that we have something similar called mung beans, I may give it a try for this recipe. 🙂

It’s really good, it’s easy to make – as most of the ingredients will already be in your fridge/on your shelf. That’s big for me. I don’t like buying ingredients from the store! Plus, you can make it whatever you want – fairly easily.
