Clean Eating doesn’t have to be difficult.  I am all about simple when it comes to eating.    I need to prepare meals that are decent tasting and fast.

I made this for breakfast and it was fantastic – and very filling.  Actually, it kept me satisfied the entire morning.

 

Clean Eating Recipe – The Simple Breakfast Burrito

Ingredients

Jalapeños (2 Tbsp)

Onion (1/4)

Green pepper (1/4)

Tomato (1/4)

6 inch whole wheat tortilla

1 tsp. Extra Virgin Olive Oil (EVOO)

1 Slice Turkey Bacon

2 Egg whites (use whole eggs and separate)

1/4 Avocado
 
Directions

Warm the oven.

Chop the onion, peppers, and tomato.  Saute in the EVOO for 2 minutes and set aside.

Separate the egg whites.  Cook the bacon and egg whites.

Place the whole wheat tortilla on a piece of aluminum foil in a jelly roll pan.  Open-faced, place the sautéed veggies, the egg whites and the turkey bacon.  Add sliced avocado.  Heat in the oven on warm 5 minutes.

Fold over the burrito and enjoy!

 

Fix servings – 1 Yellow, 1 red, 1 green, 1 tsp.

  1. With such simple and fresh ingredients, I agree – this looks great! Our breakfast burritos are the usual egg, cheese and sausage, so thanks for sharing this spin on it, Lisa. The avocado looks especially refreshing for summer. I’m thinking maybe even a squirt of lime juice might be in order 🙂
