Guest Post: The Power of Green Eating! 12-Year Old Nutrition Expert Shares Why Green Food is Healthy

 
Hey Guys!  Kai here from Generation Kai!  As a 12 year old I’m just like you, getting ready to go back to school to see my friends again.  Oh yeah, and I’m going into the 7th grade!  You probably don’t know who I am and I don’t know who you are so we’re even.  Last year I published a book called, “Digest This Now for Kids!” it’s a quick and easy read about how your body works and what you need to do to get and stay healthy.  I talk about everything from food to stress (we’re not supposed to be stressed as kids but some of us are).  You’d think we as kids don’t need to learn how to get and stay healthy, we’re kids, we’re supposed to be healthy.  So many of us are tired, overweight, on lots of medicines already for whatever health issues we are having.  I don’t know about you, but I believe at our age, this shouldn’t be happening!  I get asked to write articles for magazines and online blogs all the time to give kids (and even adults) tips on how to be healthier.  So, if you’re ready to get healthy and stay healthy this article is for you!

One topic kids never like to talk about is GREEN food.  In fact, it tends to be first food we argue about eating, push away or avoid all together.  I know many of you wonder why greens are so important and I know most aren’t eating / drinking enough greens every day.  That’s right you can even drink your greens each day.  I’ll explain more later…

So let’s jump right in, before I explain why green food is so important let’s talk about what I mean when I say green food.  When we’ve asked kids if they eat green vegetables most of them say, “Sure, I eat peas, a piece of ice burg lettuce on my burger, and carrots.”  News flash…carrots are not green.  And peas (green peas which is what most kids are referring to) are actually more of a starch than a vegetable.  Finally, one slice of ice berg lettuce on your burger isn’t going to cut it, plus ice berg lettuce doesn’t count because it doesn’t have a lot of vitamins and minerals.  There is literally nothing healthy about it.  Green vegetables are things like spinach, red/green leaf lettuce, broccoli, Swiss chard, bok choy, kale, green beans, zucchini, green peppers, cabbage, cucumbers, celery, and I’ll even throw in avocados (even though it’s a fruit).  

Now the better question is, why are green foods so good for us?  Why should we be eating them every day? What is it about these greens that make them so important to our diet, to our lives, to our bodies?  The bottom line is that they give life to our cells, to our tissues (layers of cells that make up our organs), to our organs (you know things like your lungs, liver and heart), to our body (which is made up of a whole lot of organs and tissue).  Green foods have the vitamins, minerals and antioxidants that are key to keeping our bodies healthy.  I promise you cannot get these nutrients from bags of chips or snack bars.  Green plants have chemicals called phytonutrients / phytochemicals that help to fight inflammation and help get rid of poisons in the body.  Some of the phytonutrients help to get rid of old tired cells and keep the DNA in your cells healthy.  

Have you heard about chlorophyll?  It is the green pigment that gives green plants their color.   It’s like the blood of plants and it’s what allows the plant to absorb energy from the sun through a process called photosynthesis (sounds a little bit like science class right?).   The more sunlight the plant food has, the more nutritious it is.  What’s crazy is the molecules that make up chlorophyll are almost the same exact molecules that make up hemoglobin.  What’s hemoglobin you ask?  Hemoglobin is found in our red blood cells, and carries oxygen throughout our body to our cells / tissue.  It’s crazy how similar chlorophyll and hemoglobin are and when you eat greens, you ingest the chlorophyll from the plants and in doing so, you increase your body’s ability to carry oxygen and nutrients throughout your body.  When you eat greens, you are literally giving life and energy to your cells, your tissue, your organs, your body.   

You should try to eat something green at least three times per day.  One of the ways you can do this first thing in the morning is by drinking a green smoothie.  This is how we start out the day at our house and I can’t tell you how good it makes us feel.  I didn’t like it at first but my Mom’s made me drink just a little bit each day and now it’s not so bad!  That’s my body telling me how much I need it!  A simple green smoothie consists of ½ of an English cucumber, 2 stalks of celery, a handful of spinach and enough water (or we like to use almond milk) to cover half the ingredients.  Blend, add a little ice, and blend again for an amazing start to your day.  To watch me make our green smoothie click here – don’t forget to like and subscribe while you’re out there!
