I love the idea of eating green foods on St. Patrick’s Day, as long as food dyes aren’t involved. There are plenty of naturally green—and nutritious!—options available, and our dairy-free minty green coconut shake is a perfect example. Fresh spinach, avocado, and mint give this creamy frozen drink its verdant hue—and the refreshing flavor seems just right for welcoming spring.

Yield: 1 serving
Active Time:

½ cup unsweetened almond milk
½ can coconut milk
1 cup packed baby spinach
5 to 7 mint leaves, stems removed
½ avocado
1½ tablespoons honey
1 teaspoon vanilla extract
1 teaspoon peppermint flavor or extract
2 teaspoons coconut oil
1 cup ice, crushed
1 teaspoon cacao nibs

Place all ingredients except ice in blender; blend until smooth. Add ice and blend again until incorporated.Sprinkle cacao nibs on top.
