Do you know that bones are 50% protein?  So when you cook them, vital amino acids and minerals seep into the broth.  These important elements are converted in your body to use as energy, making muscles stronger, and build a stronger system. 

I have really come to love and rely on bone broth.  In addition to amino acids, minerals seep into the broth like calcium, magnesium, sodium and potassium.  Sound familiar?  These are all the nutrients which are released when we go ulta low-carb.    These minerals need to be replaced daily, and bone broth is a good way to do that!

I use it in everything I can, soups, meats for braising (see recipe below), vegetables (I make a mean braised kale), rice for the family, and more.  I substitute bone broth in any recipe that calls for water.  Why?  It adds flavor and collagen (supporting gut health, lean muscle, joints, and glowing skin), and provides the vital vitamins and minerals I need for optimal health.

A protein, gelatin, is extracted from bones.  When this protein gets cold, it gels.  This is the sign of a good long cooking bone broth.   I placed chicken broth in a mason jar overnight, and in the morning, this is what I saw!

One of my favorite foods is short ribs.  I love short ribs.  YUM!  In my opinion, they should always be cooked low and slow, which makes them ideal for braising in delicious bone broth.

So delicious. 

I use Kettle & Fire chicken or beef broth, serve the short ribs atop shirataki rice (miracle rice), a terrific low-carb rice alternative.  Bland and tasteless on it’s own, but with the braising sauce, it just sucks it up!  With only 1g total carb for the entire package, it makes the perfect compliment to my keto lifestyle, and the shortibs a perfect keto meal

Ingredients
  1. 2.5-3 lbs. short ribs (from grass-fed cattle)
  2. 3 cups Kettle & Fire Bone Broth
  3. 2 rosemary sprigs
  4. 1 package Miracle Rice
  5. salt
  6. pepper
  7. 4 cloves garlic
  8. 2 Tbsp. ghee
  9. 1 package miracle rice
Short Ribs
  1. Heat the oven to 325 degrees and liberally salt and pepper the meat on all sides.
  2. Heat Ghee over medium-high heat. Sear (until brown) short ribs on all sides 15 minutes total.
  3. Turn the heat down to medium. Add onion and garlic around short ribs and cook until fragrant (about 5 minutes).
  4. Add bone broth and allow to simmer.
  5. If not using a dutch oven, transfer to a casserole pan. Add rosemary sprigs, cover and cook for 2-1.5 hours until the meat is extremely tender and coming away from the bone.
  6. Rest the meat (covered) for 20 minutes. Serve by pulling meat away from the bone.
Shirataki Rice
  1. While the meat rests.
  2. Boil 3 cups of water
  3. Drain the liquid from the rice and rinse in cold water.
  4. Boil Miracle Rice for 10 minutes.
  5. Drain.
  6. In a dry non-greased pan, over medium heat, dry out the miracle rice. Keep mixing until it's dry.
  7. Serve.
Tip
  1. You can serve right away. Do you find short ribs greasy? Refrigerate overnight and scrap the fat layer that forms. Warm them up on the stove by cooking in low heat for 15-20 minutes. I find that there is more flavor when dishes are allowed to rest in the refrigerator overnight.
