I made a pork shoulder this weekend on the grill.  I am really trying to be mindful about waste.  The pig was farm raised, and I want to make sure that I use the whole pig.  So the weekend was spent cooking and cooking  good!

I took the skin and took off the fat and made homemade pork rinds and pork crackling (that I use in my salads).  I took the meat to make my homemade keto chili, and I use the bones to make a delicious bone broth which I use in my chili and as soup bases! 

It’s a whole bunch of yumminess from one pork shoulder!

The Keto chili turned out particularly good.  It was spicy, easy and in my opinion, just perfect for any Cinco De Mayo celebration.  Bring it to share and stay on track.  Don’t even tell your guests it’s low carb, they won’t be able to tell :).  Serve it atop shirataki rice, and add melted cheese, sour cream, and avocado for a hearty healthy meal!

Grilled Pork Shoulder Chili

  1. 1 Pork Shoulder (butt) with skin and fat
  2. 9 Tbsp. Chili Powder divided
  3. 1 Tbsp. Plus 2 tsp. Dried Cumin Divided
  4. 1-1/2 Tbsp. Paprika
  5. 1-1/2 Tbsp. Thyme
  6. 1 Tbsp. + 1 tsp. Maldon Sea Salts divided
  7. 1 Tbsp. Garlic Powder
  8. 1-1/2 Tbsp. + 1/2 tsp. Fresh Ground Pepper divided
  9. 1 Tbsp. Cayenne Pepper
  10. 3 Garlic Cloves
  11. 4 Cups Chicken/Beef/Pork Bone Broth or Stock
  12. 5 Slices Bacon
  13. 1 tsp Glucomannan Powder
  14. 1 Small Onion (155g)
  15. 1/2 Large bell pepper (or one small) (100g)
  16. 1 Fresh Jalapeno Pepper (20g)
  17. 1 Roma Tomato (100 g)
  18. 1 Pork Shoulder (Butt)
For Grilling
  1. Remove skin and fat and freeze/refrigerate for pork skin and lard.
  2. Mix the grilling seasoning (8 Tbsp. Chili Powder, Thyme, Paprika, 1 Tbsp. Cumin, Maldon Salts, Garlic Powder, Fresh Ground Pepper, and Cayenne Pepper).
  3. Rub onto the pork shoulder.
  4. Set the grill to the lowest setting and grill on indirect heat for 8 hours, checking temperature.
  5. Render bacon in a large stock pot. Once the fat is rendered, take out bacon and break it up.
  6. Add 30 ounces of pork shoulder
  7. Chop garlic and Jalapeno peppers. Rough chop onion, green pepper and tomato. Add to stock pot
  8. Add remaining ingredients to the stock pot (crushed bacon, 1 Tbsp. Chili Powder, 2 tsp cumin, 1 tsp. Maldon Salts, 1 tsp. Oregano, 1/2 tsp. Black Pepper, and Beef/chicken/pork broth)
  9. Cook covered 2-3 hours to enhance flavors
  10. Near the end of cooking, remove the top so that some of the liquid can evaporate.
  11. Enjoy!
Great Tip for Thicker Chili
  1. Mix 1 tsp. Glucomannan Powder into water or beef broth and add to the chili. If not thick enough, add another tsp.
Tip for those who are non-keto
  1. If you are not following the keto diet, add 2-15 ounce cans of organic Italian diced tomatoes in place of the roma tomatoes. Add 2 cans of kidney beans towards the end of cooking, or add in your own homemade kidney beans!
Great Tip
  1. Serve atop shiratki rice, and add melted cheese, avocado and sour cream for a delicious meal!
