Eating is such a sore point for so many people.  Generally, Americans will sacrifice their health in order to eat what they want.  Luckily, with a low-carb high-fat diet like the ketogenic diet, there are no sacrifices.  You get lean, improve your sleep, have more energy and feel better while enjoying flavorful filling foods.

It’s a different type of lifestyle.  Because of the ultra-low carb nature, you will have to make many of your dishes from scratch.  But it’s not difficult with Sheet Pan Ketogenic – over 150 one tray easy and delicious low-carb recipes!

 

Low-carb BBQ ribs for summer!

 

Summer means vacations, days spent at the pool, and BBQ’s (my favorite part).  I love cooking out, and more so, eating what I make!  I love BBQ maybe more than average.  Luckily I don’t have to sacrifice my favorite foods in order to meet my health and fitness goals.  I can have both!

This is a very easy recipe!

You can start on the same day as you want to eat your ribs (AKA no overnight marinades) but you want to start early.

The first step is defrosting your spare ribs and taking off the back membrane (if it’s not off already).  Then you add sea salt, peppercorn, and bay leaf to 1 cup boiling water.  After mixing, pour onto your ribs and add 6 more cups of ice cold water.  This is your brine.  Brine your ribs meat side down covered in the fridge for 30 minutes – 8 hours.  I allowed mine to brine for 6-hours.

Heat the oven to 250 degrees and allow it to cook for 2.5 hours.  If you have an electric oven, I would suggest cooking at 225 or 200 and monitoring the ribs as they go.

After you brine, pour off liquid and pat dry with a paper towel.  Then rub your seasonings on the ribs.  I added my seasonings to 1 Tbsp Avocado oil and rubbed.

Then you will cook your ribs low and slow while covered. 

While your ribs cook is the time to prepare your BBQ sauce!

Start by making low-carb ketchup.

Here is the recipe I used for low-carb ketchup.  It’s easy and tastes really great!  I have made it more than a few times with great results.

Since I don’t use ketchup all that often,  I halved the recipe so that I have a few Tbsp. remaining for sandwiches after I use 1/4 cup in the BBQ sauce recipe.  It just eliminates waste.

About 30 minutes prior to the ribs finishing is time to start the BBQ sauce.

In a medium saucepan, combine the vinegar, low-carb ketchup, garlic powder, onion powder, smoked paprika, cumin, salt and stevia.

Cook for 30 minutes or until reduced to 3/4 cup.

When the ribs are done, carefully transfer them into another dish and reserve 1/2 cup cooking liquid (disposing of the rest).

In a food processor or blender combine 3/4 BBQ sauce, 1/2 cup cooking liquid, 1 scallion, and 1/4 cup chopped cilantro.  Process until smooth.

Rub sauce over the ribs reserving the remaining sauce to serve on the side. 

Roast the ribs for 15 more minutes, cut and enjoy!

For the brine
  1. 1/4 cup sea salt
  2. 1 bay leaf
  3. 1 tsp whole peppercorns
  4. 7 cups water
  5. 4 cups ice
For the ribs
  1. 1 rack pork ribs (2-3 lbs)
  2. 1 Tbsp avocado oil
  3. 1 tsp smoked paprika
  4. 1/2 tsp ground cumin
  5. 1/2 tsp onion powder
  6. 1/2 tsp garlic powder
For the rib sauce
  1. 3/4 cup BBQ sauce
  2. 1/4 cup cilantro
  3. 1 scallion (both white and green parts)
BBQ sauce
  1. 1 cup apple cider vinegar
  2. 1/4 cup low-sugar ketchup
  3. 1 tsp smoked paprika
  4. 1/4 tsp ground cumin
  5. 1/2 tsp onion powder
  6. 1/2 tsp garlic powder
  7. 1/4 tsp sea salt
  8. 2-3 drops liquid stevia
To make the brine
  1. Dissolve the salt into 1 cup of boiling water. Add bay leaf and peppercorns. Cool the mixture with 6 cups of ice water.
  2. Take off the membrane.
  3. Place the ribs into a baking dish, meat-side down. Pour the brine over the ribs and place the dish into the refrigerator on the bottom shelf. Cover and allow to sit for no more than 8-hours.
To cook the ribs
  1. Preheat the oven to 250 degrees.
  2. Remove the ribs from the brine and pat dry with paper towels.
  3. Add avocado oil and all spices and rub over the ribs (front and back).
  4. Place the ribs meat side down on the sheet pan. Cover the pan tightly with foil and bake 2.5 hours.
  5. Remove the pan from the oven and remove the foil. Carefully transfer the ribs to a separate dish.
  6. Pour 1/2 cup of the cooking liquid into a blender or food processor and discard the rest. Add all of the BBQ sauce, cilantro and scallion to the blender and puree until smooth.
  7. Return the ribs to the sheet pan and pour half of the BB sauce over them. Return to the oven and roast for an additional 15-minutes.
  8. Serve the remaining sauce on the side.
To make BBQ sauce
  1. Place all ingredients into a medium saucepan. Bring to a simmer and cook for 25-30 minutes until reduced to 3/4.
  2. If necessary stir in additional liquid stevia to taste.
  3. Store in a covered container for up to a week.
