Writing this post seriously makes me want some banana bread! And finally, I can have it, and it can fit my goals! I don’t have to have it laden with sugar, flour, and all kinds of dirtiness. I can have banana bread that is full of fiber and good for my body and aligns with my goals!
I have always loved banana bread. I love it moist and warm with eggs! I haven’t had it in a long time. I was keto for a year, and bananas and keto are not friends. At this time in my life, and in my fitness journey, I’m not doing keto so I thought it the perfect opportunity to have some good old fashioned banana bread.
But just not any kind. The interwebs are laden with recipes containing tons of sugar, honey, and brown sugar. I saw this article on artificial sweeteners and decided that I need to reduce my consumption. There are enough sweeteners in my protein powder and BCAA’s, I don’t need to add them to my cooking.
I reviewed recipes and came up with a really good one, that fits my goals to lose fat, and to get stronger.
Plus, I can enjoy a piece guilt free!
Ingredients
1-1/4 cup Sprouted White Whole Wheat Flour, or flour of choice
1/4 cup oat fiber
2 Tbsp organic butter
2.5 Tbsp raw honey
1 free range egg
1/4 cup fat free milk
1 tsp Spice Island Cinnamon
1 tsp Baking powder
1 tsp baking soda
1/2 tsp salt
4 ripe bananas (about 530g)
Directions
Prepare a bread loaf pan by spraying with coconut oil or olive oil spray and set aside. Set the oven to 350 degrees F. Melt the butter and honey in a microwave safe dish.
Add all dry ingredients into a bowl (oat fiber, flour, baking powder, baking soda, cinnamon and salt). My favorite cinnamon is the spice Island cinnamon. The minute you take the cap off, you can smell the cinnamony goodness!
Add the wet ingredients (honey, butter, egg, banana, and milk) into a food processor and mix well.
Add the dry ingredients to the wet ingredients and mix just until all dry ingredients are incorporated.
Pour the batter into your prepared pan.
The batter should be nice and liquidy. It shouldn’t be stiff.
Bake for 35-40 minutes.
It really is moist and delicious. The moist and delicious doesn’t come from the fat or the sugar, but from the ripe bananas. The texture comes from the right amount of fiber added!
