Recipe – 6 Layer Mexican Dip With Fresh Guacamole

6 layer mexican Dip - Feature

Okay, not the healthiest recipe in the world, but boy – is it good.  I made this 6 layer Mexican Dip for a church function.   For a treat – I think it’s a good variation to the ordinary dip for tortilla chips or bread.  YUM!  Plus, i just love fresh Guacamole.



  • 6 avocados
  • 1 lime (roll it out on the counter to release the juice)
  • Salsa, or ingredients to make your own fresh salsa – recipe coming soon
  • 1 Can of Refried Beans (or your own favorite refried bean recipe) – recipe coming soon
  • 1 lb ground beef
  • The smallest tub of sour cream you can find
  • Taco seasoning (either store-bought or freshly made) – recipe coming soon
  • Freshly grated Cheddar, Cheddar Jack or your favorite type of cheese (1 cup)
  • Salt and Pepper to taste
  • 1 Fresh Jalapeno to spice it up – diced




Fresh Guacamole

  • Wash and peel all six avocados.


  • Add salsa slowly and mix.  Add first 1/2 cup, then decide if you want more salsa.  If you are using store-bought salsa, add your diced Jalapeno to taste.  For less spicy, get rid of the seeds before dicing.


  • Add about 1 tsp of lime juice.  Be careful here.  You can easily overdo it with the lime.  I role my soft lime out on the counter to release all the juices.  to avoid seeds, I take my fork, stick it into the lime, and move it back and forth to juice it.  I do not like overly limed foods, so I add as little as possible.  I taste along the way.


  • Add salt and pepper to taste


  • Set aside



Meat and Beans Preparation

  • Brown meat and cook with Taco Seasonings (according to directions).  Set aside.


  • Make Beans or use canned beans.



Layered Dip


6 Layer Mexican Dip

  • Add  1/2 cup of refried beans to your bowl, and spread along the bottom.


  • Add  3/4 cup of your meat mixture and carefully spread on top of the beans.


  • Sprinkle 1/2 cup of  your freshly grated cheese over your meat mixture


  • Add 1/2 cup sour cream and spread along the cheese layer


  • Add 3/4 cup guacamole and spread along the sour cream layer


  • Sprinkle 1/2 cheese to top it off

  5. Oh yum! Mine would love it! I’m guilty of over liming- we love lime! I drown my guacamole in it:) hubby almost always asks for a slice of lime & tortillas with dinner. It could be chicken noodle soup- he adds lime!!
